Jerky is crazy good. Whenever I make it I end up eating all of it way too fast! The only other thing that is equally good has to be Tørrfisk! It’s like a drug to me.
The marinade I’m using this time was a blend of all sor of things.
For 2 kg of meat I used:
2 dl Beer
2 dl BBQ sauce
1,5 dl Soy sauce
3 Tb spoons Worchester sauce
3 Tb spoons Brown Sugar
1,5 Tb spoons Black pepper, roughly ground
Chilli, Koriander, Onion powder, Garlic powder - 0,5 tablespoons of each.
I’m thinking it might be overkill. Too many ingredients perhaps. We’ll see how it turns out.
And yes, I hunt the Deer myself.
We are 4 families who hunt together on the land of my father’s farm, along with 2 other farms combined as one hunting area. Last year we shot 12 deer, so we do have plenty of meat, both for dinner and for jerky.

So cool! It is extremely expensive to go pürsch hunting in Denmark, but my father hunted on my uncles grounds, and brought home deers for the family. Roasted deer tenderloins …
I think the photo looks very much like the forest region in GZ during winter (just saved you there, buddy ). Btw, is it a Meusser with scope and silencer you are using?
