When you die in this game, do you lose all inventory?

Nope, none whatsoever. If you do, it is not supposed to happen.
This is a “improvement point” for sometime in the future in terms of the cost of death in the game. Currently there is absolutely no risk associated with dieing in the game. Adrenaline shots are easy to come by, and even if you bleed out, you just respawn at the nearest safe house.
This will probably change fairly soon, but for now it’s not a problem
