Does anyone know how quickly tanks and hunters self-repair in the event of a broken-off fight?
I’m pretty sure they don’t. Damage that you have applied to a machine is not supposed to go away. So if a machine (or you) runs from a fight, it will stay damaged next time you encounter it. No matter how long it takes. This is actually stated in one of the first commercial trailers for GZ.

As IanForce stated, machines don’t heal themselves.
Though, if you battle, break the engagement, quit to main menu and continue at later time/date, the damaged machine may not be in the same loc anymore but instead somewhere else on the map. But it will be damaged.
Many thanks for the answer and the welcome. Another question, if I may: how quickly do ammo boxes replenish? I seem to recall something about 4 hours - and is that game time or real time regardless of game activity?
Loot boxes/bags restock after 2 in-game hours. Meaning that you have to actually be in the game, playing for the countdown to advance.
Also, countdown is individual for each loot box/bag, meaning that when you opened one bag and after 1.5 in-game hours, you open another somewhere, the 1st bag you opened still has 30 mins left to go. It won’t reset to 2h.
And opening the loot container is enough to get it’s cooldown going. You don’t have to empty it out.

Well, i thought it was 2h since Rival spawn cooldown is also 2h.
Your question made me doubt if it’s 2h or 4h in-game hours. So, did some digging;
Cooldown timer was introduced in May’s Update and from patch notes:

To me, “few” = 2. 4 would be “several”.
I know that in dev streams, devs had said how many hours it actually is. Need to dig into those.
Hey, some clarifications:
It’s correct that most machines do not replenish health over time. (The exception being some mission spawned machines that sometimes do this.) This is part of our unique persistent world simulation that simulates the life of every machine in the game at all time no matter if you are close to them or not.
Loot containers all have a 4 hour cool-down before they restock, but you should be able to find most of the common things you need in the game by looting machines.
